If I only want to show one product/category to a role, but I have 100 products/categories, I’d have to select each product/category to be Invisible.
Instead it would be nice if the “Visible” categories/products would override the “Hide All” option so that I could hide everything for that role EXCEPT the ones I choose to make visible.

The plugin already has this ability. If you want to show only one product/category, simply set that one product/category as “visible”. Implicitly everything else will be hidden… you don’t have to set them invisible separately.
